Simple Stuffed Turkey Burgers
Happy 4th of July! Holidays and family gatherings can be some of the trickiest things to navigate while maintaining a healthy lifestyle. I hear it from clients all the time.
Maybe you don’t want to fall off track so you feel anxious leading up to the event.
Maybe you make a vow to yourself to stick to your diet plan no matter what.
Or maybe you figure you don’t want to be “weird” for not wanting to eat gluten or dairy so you throw your whole way of eating out the window and just go for it.
Either way…sounds like a lot of stress! We have enough of that in our lives.
I RECOMMEND A TECHNIQUE CALLED ZIG-ZAGGING WHEN IT COMES TO SOCIAL FOOD SITUATIONS (and for life in general).
The Zig is when you have control over your food like when you cook at home. The Zag is when you’re in a social situation and can’t be 100% true to your eating plan.
HERE’S AN EXAMPLE: For the 4th of July, you could bring a dish of your own to a social gathering that you know will be healthy and delicious (The Zig). Then choose your absolute favorite indulgences to partake in (The Zag). These Simple Stuffed Turkey Burgers would be a great dish to bring; you’ll get some greens, a lean protein, and other veggies. Then you can choose something on the side or for dessert that’s worth it to you.
If chocolate isn’t your thing, then don’t have that brownie. Instead choose a slice of the key lime pie. Or, if you prefer savory snacks, then allow yourself a handful or two of that Chex mix and skip the dessert section altogether.
TWEETABLE: You can, and should, be choosy about what you put in your body… even when you cheat!
SIMPLE STUFFED TURKEY BURGERS RECIPE
Time: 20 minutes
INGREDIENTS: Use organic whenever possible
- 1 pound lean ground turkey
- ½ cup roasted red bell peppers
- ½ cup goat cheese crumbles
- 1 big handful spinach
- 2 garlic cloves
- ½ tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon sea salt (I use Real Salt brand)
- 1/4 teaspoon fresh ground pepper
In a medium sized mixing bowl combine the ground turkey with sea salt, pepper and balsamic vinegar. Divide turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total.
Dice red bell peppers and pat with a paper towel to remove most of the water. Mince the garlic and rough chop the spinach. Heat olive oil in a saucepan over medium low heat. Saute garlic for 30 seconds, careful not to let it burn. Add the red bell peppers and continue sauteing for another 30 seconds. Lastly add the spinach and saute until wilted, about another minute. Remove from heat.
Spread the veggie mixture over 4 of the patties and sprinkle 1-2 teaspoons of goat cheese crumbles on each. Top with remaining patties, working the turkey around the edges to seal burgers closed. Season with salt and a few grinds of pepper. Grill or broil until cooked through, about 4 minutes per side. I like to serve these bunless with some dijon mustard on top. My Healthy Summer Slaw or my Sprouted Lentil Salad would be a great side dish!
