No-Bake Whenever Bars: Great Kids Snack
Nobody wants to turn the oven on when it’s hot outside! So what’s a baking-loving girl to do in the Summertime? I have the perfect solution: Try these No-Bake Whenever Bars! They’re great for adults and kids alike and can be enjoyed for breakfast, lunch, snack…whenever!
I originally developed this recipe as a kids snack for a cooking demonstration I was presenting at a local street fair. As the demo went on I realized the adults were just as crazy about these snack bars, and not just because they taste great 😉
What Makes A Great Kids Snack?
The following elements are what make a great kid snack and why these no-bake whenever bars are such a hit. What’s interesting is that these same elements are also enjoyed by adults and can sort of “bring out the kid in all of us”, making these treats perfect for Summertime fun! My boyfriend couldn’t get enough of them.
#1 It’s healthy, yet they eat it
Let’s face it, healthy doesn’t always mean delicious. But I promise, no one in your household will be complaining about these tasting “too healthy.”
#2 Preparing this recipe doesn’t add to your stress
You have enough on your plate already. You don’t need to spend hours in the kitchen to keep yourself and your family healthy. These bars are so simple, easy to make, and the recipe is easily modified to suit picky eaters
#3 Big nutrition in a small package
During the summer you’re running from activity to activity and need a meal or snack that is portable AND can provide the energy you need to keep the fun level high. These bars contain good fats, wholesome carbs, and protein…all in a package that can fit in your pocket.
#4 You get to play with your food
These bars are so simple you can have your kids help you make them. Everyone loves to play with their food, right? And unlike baking recipes that require precise measurements, these no-bake bars are foolproof.
NO-BAKE WHENEVER BARS RECIPE
(gluten free, dairy free, vegetarian)
Total time: 10 minutes
Makes: 12 bars
INGREDIENTS: Use organic whenever possible.
- 1 cup gluten free quick oats (can use old fashioned oats as well)
- 1/2 cup almond butter
- 1/4 cup honey (preferably raw + local)
- 1/4 cup coconut flakes
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1/2 cup toppings of your choice (dried fruit, dark chocolate chips, nuts, etc.)
Start by mixing the almond butter and honey in a small bowl. Option here to microwave them together for 30 seconds. This makes it easier to work with, but not absolutely necessary.
Next add the oatmeal to a larger mixing bowl and pour the almond butter-honey mixture over the oatmeal as well as add the vanilla extract. Mix with a spatula or your hands until combined. Now add the coconut, chia seeds, and toppings of your choice. I used dried cherries and dried apricots. Again, mix with a spatula or your hands until well combined.
Spray an 8×8 baking dish with a layer of cooking spray. (I used a glass baking dish and coconut oil spray from Trader Joe’s). Spread the bar mixture into the pan until you have pressed it evenly along the bottom of the baking dish. Cover with foil or plastic wrap and pop into the freezer for a minimum of 45 minutes.
When the bars have hardened you can slice the bars into 12 small bars…or you can make bigger squares if you like. Enjoy immediately or wrap individually and store in the refrigerator.
