Gooey Gluten Free Brownies
Everyone loves brownies! Some like them fudgey, some like them cakey, but I like my brownies gooey. Figuring out how to make a gooey gluten free brownie is not an easy feat. It took me three tries to get this right, but they finally came together with this recipe.
Now I wouldn’t call these a health food, but they are gluten free, grain free and refined sugar free. That’s certainly “healthy-er” than your typical brownie. I’ll be making a fresh batch of these for my honey on Valentine’s Day. Try them out and see what your loved ones think. Maybe don’t mention they’re gluten free until after they’ve tried them 😉
GOOEY GLUTEN FREE BROWNIES RECIPE
Prep Time: 10 minutes
Bake Time: 20-25 minutes
Makes 9-12 brownies
INGREDIENTS: Use organic whenever possible
- 1 cup almond butter
- 1/3 cup honey
- 1 egg
- 2 tablespoons grass-fed butter
- 1 tablespoon olive oil
- 1 teaspoon vanilla
- 1/3 cup cocoa powder
- 1/4 cup dark chocolate chunks
- 1/2 teaspoon baking soda
Preheat oven to 325 degrees F. In a small bowl add butter and half of the dark chocolate chunks and melt in microwave for 30 seconds. In a large bowl, whisk together the almond butter, honey, egg, vanilla, olive oil, and melted butter and chocolate.
Stir in the cocoa powder and baking soda. Gently fold in the remaining chocolate chunks.
Pour the batter into a 9-inch baking pan. Bake for 20-23 minutes, until the brownie is done, but still soft in the middle.
Let cool completely before cutting. Wrap and store in the refridgerator…if they last long enough
