Almond-Cranberry Energy Bites
These small bites pack a big punch and they do it without gluten, grains, or dairy. They’re a great snack, but even better potluck item during the holiday season. They are a healthier alternative to cookies, but they’re still a sweet treat to be enjoyed in moderation
ALMOND CRANBERRY ENERGY BITES
(gluten free, grain free, dairy free, vegan)
Prep time: 10 minutes
Total time: 60 minutes
Makes: 12-14 cookies
INGREDIENTS: Use organic whenever possible.
- 1-1/4 cups almond meal (also called almond flour)
- 1/2 cup shredded unsweetened coconut
- 1/4 cup dried cranberries, chopped into small bits
- 1/4 cup grade B maple syrup
- 1/2 teaspoon almond extract
- 1/4 teaspoon sea salt
In a large mixing bowl, stir together all ingredients until they create a sticky dough. Scoop a ping pong ball sized amount of the dough and roll into a ball with your hands. Chill the bites in the fridge on a place for at least 30 minutes.
Preheat oven to 375 degrees F. After the bites are chilled, place them on a baking sheet and bake for 12 minutes, or until the bottoms begin to brown. Remove from oven and let cool before serving.
